The Sommelier Diploma Program was founded in 2005 with the goal of promoting education, professionalizing the craft, and fostering wine culture. We are also committed to highlighting our region as Mexico's leading wine producer, making us the first school specialized in wine education.

Objetivo

Gain the tools to professionalize wine culture through the theoretical and practical study of grapes and wine. Learn to identify general characteristics through sensory analysis, explore the world's wine regions, and master wine service and food pairing. You will also acquire foundational knowledge of spirits and beer.

Professionals in the wine, hospitality, and service industries, as well as professionals from other fields, wine enthusiasts, and the general public looking to deepen their knowledge.

Contenido

Grapes and Wine

We will explore the structure and composition of grapes and their contribution to wine, as well as the components of wine and its main styles.

Tasting Methodology

Using our senses and a standardized tasting system, we will learn the factors and proper processes for evaluating a wine's characteristics and drawing conclusions about its quality.

Viticulture and Vinification

We will analyze how environmental influences, viticultural choices, the vine cycle, and winemaking and aging processes determine the factors that influence wine quality.

International grape varieties

We will learn to describe the characteristics of the main grape varieties that have been successfully grown and vinified in various countries with different terroirs.

Old World regions

We will explore the main Old World regions with a long history and tradition of winemaking, as well as their specific grape-growing and winemaking styles.

In this diploma program, we will cover the regions of France, Spain, Italy, Portugal, Germany, and Austria.

Food pairing

We will explore the flavor interactions between food and beverages, the effects they produce on our palate, and the key factors involved in pairing, using practical exercises to reinforce theoretical understanding.

Distilled spirits of Mexico and the world

An introduction to spirits and their production processes. Through tasting, we will appreciate their flavors, aromas, and textures.

Distilled spirits of the world:

Whisky/Whiskey, Bourbon, Gin, Vodka, Rum, Cognac.

Mexican Spirits:

Tequila, Mezcal, Sotol, Bacanora.

Introduction to Beer

In these sessions, we will cover the main brewing processes, ingredients, styles, and classifications of beer.

Guided by our experts, we will taste a variety of styles to identify their organoleptic characteristics.

Mixology Workshop

Through hands-on practice, we will focus on the essential techniques for crafting the perfect drink. We will prepare the world's most famous cocktails, following established standards to achieve a harmonious blend with unique characteristics in flavor, balance, and presentation.

Wine Service

We will cover service techniques, proper wine storage, uncorking protocols, and recommended serving temperatures for different types of wine.

Wine Marketing

We will examine various approaches used to assist the end consumer in their purchasing decisions across different scenarios.

Cooking session

We will head into the cooking workshops to create our own multi-course dinner while learning to appreciate the ingredients to create the perfect pairing.

Requisitos

  • Must be of legal drinking age
  • Original and copy of a valid government-issued ID
  • Complete the enrollment application
  • Pay the corresponding enrollment fee

  • Tasting kit and study materials provided at the start of classes
  • Tasting of wines, beers, and spirits according to the session topic
  • Transportation and tastings during field trips
