The National Council for Standardization and Certification of Labor Competencies (CONOCER) is responsible for developing the productive potential of human capital by promoting the National Competency System (SNC) and contributing to improved employability, productivity, and competitiveness for both individuals and the country.
A public or private organization or institution authorized by CONOCER, upon the proposal of a Certification and Evaluation Entity (ECE), to evaluate, for certification purposes, the competencies of individuals based on a specific Competency Standard registered in the National Registry of Competency Standards.
The Conservatory of Mexican Gastronomic Culture , in its capacity as a Certification and Evaluation Entity for CONOCER, accredited Culinary as an Evaluation Center for the EC1084 Competency Standard for the Preparation of Traditional and Popular Mexican Gastronomy in March 2022.
- Obtain an officially recognized document issued by the SEP through CONOCER, backed by Culinary and the Conservatory of Mexican Gastronomic Culture (CCGM), validating the knowledge, skills, attitudes, and values acquired through empirical, formal, or semi-formal means.
- Facilitate entry and mobility within the labor market, helping to improve quality of life, while also allowing workers to stay at the forefront of the real and current needs of productive sectors.
- A guarantee that individuals possess the competencies to develop professionally as cooks of traditional and popular Mexican cuisine.
- The objective of this standard is to recognize the competencies acquired by cooks and individuals in the preparation of traditional and popular Mexican gastronomy.
- Target audience: Traditional and popular cooks who have learned the trade empirically through the ancestral practices of their community, and/or individuals who work or intend to work in the kitchen of a food and beverage establishment that offers traditional and popular Mexican cuisine.
For candidates:
- Strengthen knowledge of the fundamentals of traditional Mexican cuisine (the milpa and its products, traditional utensils, seasonality of ingredients, and representative dishes from Mexico's gastronomic regions)
- Reinforce knowledge and skills in hygienic food handling.
- Facilitate labor mobility by obtaining official recognition issued by the SEP, which can be apostilled.
For companies:
- Increase business competitiveness by training employees.
- Improve the company's image by highlighting its social commitment through the promotion of traditional cuisine and
popular Mexican cuisine. - Reinforce the importance of hygienic food handling among employees.
- Streamline hiring processes by having a tool that allows for the immediate verification of the professional competence of job applicants.

2. Diagnostic: This tool allows you to determine if you have the experience and knowledge level required for the standard to be evaluated, or if you should take an alignment course. Culinary offers an EC1084 alignment course in both in-person and remote formats, which will help reinforce the theoretical and technical knowledge needed for the evaluation process.
3. Evaluation payment: It is essential to make the corresponding payment to begin the evaluation process.
4. Evaluation plan: Once we have registered your payment, we will request the necessary documents to continue the process. We will contact you to create the evaluation plan and answer any questions you may have.
5. Evaluation: The evaluation process lasts approximately 4 hours and is divided as follows:
6. Delivery of results: Upon completion of the evaluation process, the evaluator will provide the preliminary results at the agreed-upon time and place.
7. CONOCER takes approximately 1 month to issue the certificate.
