On February 17th, the Master’s in Mexican Cuisine at Culinary Art School hosted the Interdisciplinary Meeting “Cultural Heritage with a Focus on Gastronomy,” bringing together specialists in gastronomy, tourism, history, law, communication, and restoration for a space of academic reflection and territorial dialogue.

The session featured Dr. José Francisco Román Gutiérrez, a Doctor of American History and specialist in cultural heritage, with a career linked to UNESCO-related projects and the historical analysis of heritage in Mexico. His presentation framed gastronomy as a profound cultural phenomenon, connected to historical processes, collective identity, and contemporary economic dynamics.

The dialogue covered topics such as:

§ Food heritage and territory

§ Gastronomy in border contexts

§ Connections between academia and the community

§ Value chains and cultural development

As part of the experience, a gastronomic showcase linked to the Camino Real de Tierra Adentro was presented, in coordination with the theoretical and practical classes taught in the Master’s program by Dr. Román. Traditional preparations such as chilorio, traditional sweets, and other culinary expressions representative of the route were included.

The tasting allowed for the connection of academic discourse with a sensory experience that reaffirms cuisine as a living heritage and a space for cultural, historical, and territorial transmission.

The meeting marks the beginning of a line of academic dialogue aimed at strengthening inter-institutional networks and promoting a critical, territorial, and community-based vision of gastronomy.
