Originally from Mátape, Sonora, Nereida Véjar has spent her entire life around griddles and stoves. With over 40 years of experience cooking and butchering livestock, she is a true guardian of traditional cuisine.

Her work has been featured in the book Sabores de México and in series such as Taco Chronicles and Pati’s Mexican Table. Her specialties include beef head soup, fresh corn tamales , and water tortillas.

And to talk specifically about Water Tortillas, next November 10th, Nereida will be at Culinary to give us a talk where she will share her experience.

The water tortillas are a staple of northern Mexico. They are made only with wheat flour, water, and salt, without lard or fat, and are cooked on a hot griddle that gives them bubbles and golden spots.

They originated in rural communities in Sonora, where the simplicity of the ingredients showcased ingenuity and tradition. They are best enjoyed fresh, paired with cheese, beans, meat, or any stew.
